Newly felled timber contains a lot of moisture. Overtime it dries out, but faster in some directions than others. The result is that the timber will tend to crack. The waiting is basically about letting the drying out take place slowly and in a controlled way to minimise the cracking.

Usually timber will be seasoned for several years before being used. But there is also quite a tradition of working "green" wood. It is softer and easier to cut when green, but less stable. Turning on pole lathes is usually done with green wood. If you want to work it green then sealing the end grain of your finished blocks (to slow down drying) may help minimise the cracking.
