Hi Maria,

Peach trees are prone to many insects and diseases. I've not heard of a jelly-like sap and am wondering if it's a clear sticky substance. Sometimes you will se black mold growing on the clear substance. That could indicate the presence of either aphids or scale insects. You can read about several insect pests and diseases of peach here. The last one will take a bit of time to go through, but has alot of info.

Unfortunately you don't say where you are located, but I suspect you are in the US. If so, and none of those sites are helpful, I suggest contacting your local extension service for some help in diagnosing what you see.
