Not sure exactly which willow you have, but most willows grow well from cuttings, as you've already discovered.

I know nothing of growing plants in Florida, but generally it's more likely to be lack of water that kills the trees than the heat itself. Willows are thirsty, and pots are not the best place to keep thirsty plants.
