mature olive tree pruning

We have just purchased a peice of land in Spain with 17 olive trees on it which have been neglected and I would like to know how to prune them properly, they have lots of growth around the base and loads of dead wood throughout the branches but I want to know if I can prune in MArch when we next go over and of course how to do it correctly I'm not so much looking for great yeilds of fruit but some would be nice I just want the trees to be healthy any help would be appreciated thanks Liz
