peppermint willow

We planted two peppermint willow trees in September of 2005. They are about 8 + feet apart. They were standing straight up when we planted them. They grew quite quickly, perhaps too fast. They both are leaning --one side ways the other toward the front. We have them staked up. They are leaning about 1 + foot. Do they need to be topped or just let to grow. Will they ever start standing up? Or are they supposed to lean?
They are in no danger of falling, they just do not look like we expected them to look. If they need to be topped what time of year is best to do that?
One came through the terrible cold weather we had in California in January.
The other looks like it had some frost problems. The leaves are darker now mainly. Can we feed it something to help it? If so, when and what.
