Miniture Olive Tree

I did try and look but could not get any answers to previous questions about small olive trees.

My miniture olive bush has suddenly started loosing its leaves. The soil is very hard and feels dry, so I have been watering it a little every other day, but the problem is getting worse. What I need to know is:
How often should it water it?
from the top or from the bottom?
is it normal to loose leaves like this?
Should I feed it, if so what with?

I live in Newcastle and the bush gets direct sunshine from the west (ie afternoons, when the sun does actually shine). Temperature is between about 60-70deg C.


Any help and advice would be appreciated.
