Do the Muntjac pass through your land or is it a part of their grazing
ground? If the former and their movements can be traced (look for slots in
damp ground like for Fallow I guess)

I've only been there 10 days so not much knowledge, and the previous
owners (and neighbours) didn't really farm the land, jjust had it cut
for hay, so not much in terms of local monitoring/knowledge.

If the numbers are small damage might be minimal and controlled by shooting
and as much presence and disturbance on site by dogs as possible as deer
and dogs really don't get on.
This is basically the advice I've been given by our local FC deer group,
he says he'll ring around to find a local stalker for me, still not sure
about the dogs, there are two fairly busy footpaths and I'm quite happy
for them to stay that way.

I'm presuming most of your stock will be standards or
half standards with a good length of clear stem
Nope, some of them, especially on the chestnuts are 1 yr layers, so are
only going to be 1m odd in total height (if that)

Many thanks to everybody for your thoughts so far.
