Walnut Seat

I know this isn't a woodwortking list, but a few of you work with wood so:

We have a walnut trunk of around 14" diameter, it was felled last summer and stored intact. We are thinking of making some kitchen stools out of it by just debarking, slicing across the trunk and then bolting on some legs.

Superficial cracks aren't a worry but will it just crack apart if we try this before fully dry? Also how deep should we make our slices? The guy who did our end grain flooring (14mm thick) said the thinner the better in terms of avoiding cracks, didn't make sense to me but 5 years later we haven't got any cracks.
